Pattipan
Pattipan are known as ‘summer squash’ in North America.
Squashes are part of the Cucurbita family which ranges from cucumbers and courgettes to marrows,through to giant pumpkins!
Pattipan look like a spinning top, yellow and white, also have seen purple and green too and can be treated just like a courgette….stores for up to 1 week in the fridge.
Look a bit frightening, but will liven-up several very simple recipes…
Pattipan and chicken kebabs.
Marinate, grill or bbq for 15 minutes.

Layer sliced pattipans on a sheet of tinfoil with olive oil, seasoning and fresh herbs. Place fish fillet on tops, lemon juice and make into a parcel…bake for 20 mins….delicious succulent and healthy!
Golden Mozzarella Courgettes
Perfect for round courgettes, any colour, or with the long type when sliced in half lengthwise.
Serves 2
4-6 round courgettes, tops sliced off
2 tablespoons olive oil
1 small onion, chopped
3 medium garlic cloves, minced
2 handfuls chopped tomatoes, (or cooked mushrooms)
3 large handfuls cubed or shredded mozzarella
1 handful chopped fresh parsley
Method
Scoop out the centre of each courgette, leaving the shell.
Chop the flesh. Preheat your oven to 190°C, 375°F, gas mark 5. In a frying pan over medium heat, sauté the onion, garlic and the chopped courgette flesh in the oil until tender.
Remove from the heat, add the cheese.

Bacon, onion, garlic and chopped pattipans, served on a bed of mixed leaves with FRENCH BREAD
Pattipan also can be roasted whole …am trying this today!...tell you next time, how my family liked them.
Layer on pizza - or toss with pasta and fresh tomato sauce.
